  • 1 tablespoon olive oil: For searing the beef before roasting.
  • 1 cup beef broth: To help keep the roast moist during cooking.

For the Cajun Mayo:

  • ½ cup mayonnaise: The creamy base for the Cajun mayo.

  • 12 tomatoes, sliced: For juiciness and sweetness.
  • ½ cup pickle slices: A tangy contrast to the richness of the beef.
  • Fresh parsley (optional): For garnish and color.

Instructions

FIRST STEP: SEASON AND SLOW-ROAST THE BEEF

  1. Season the Beef: Pat the beef roast dry with paper towels. In a small bowl, combine the Cajun seasoning, paprika, garlic powder, onion powder, thyme, cayenne pepper, and a pinch of salt and pepper. Rub this seasoning mix all over the beef, making sure it’s evenly coated.
  2. Sear the Beef: Heat the olive oil in a large oven-safe pot over medium-high heat. Once hot, add the beef roast and sear it on all sides for about 4-5 minutes until it develops a rich brown crust.
  3. Roast the Beef: Once the beef is seared, pour the beef broth into the pot and cover it with a lid. Transfer the pot to a preheated oven set at 300°F (150°C). Roast the beef for 3-3.5 hours, or until it’s fork-tender and easily shreds when pulled apart.
  4. Rest the Beef: After roasting, remove the beef from the oven and let it rest for about 10 minutes before slicing or shredding it. This helps lock in the juices and ensures the beef remains tender.

SECOND STEP: PREPARE THE CAJUN MAYO

  1. Mix the Mayo: In a small bowl, whisk together the mayonnaise, Dijon mustard, Cajun seasoning, hot sauce (if using), and lemon juice until smooth and well combined. Adjust the amount of hot sauce to your taste if you want a spicier mayo.
  2. Chill the Mayo: Cover the mayo and refrigerate it while the beef finishes resting. This allows the flavors to meld together and develop a deeper taste.

THIRD STEP: ASSEMBLE THE PO’ BOY

  1. Prepare the Bread: Cut the French baguettes or Po’ Boy rolls lengthwise, leaving one side intact so the bread can be opened like a book. Toast the bread in a warm oven for about 5 minutes if you prefer it slightly crisped.
  2. Layer the Cajun Mayo: Spread a generous amount of the Cajun mayo on the inside of both halves of the bread. Be sure to coat both sides evenly for a flavorful bite in every part of the sandwich.
  3. Add the Roast Beef: Shred or slice the rested roast beef and layer it on the bottom half of the prepared bread. Pile the beef high for a hearty sandwich.
  4. Top with Veggies: Add a layer of shredded lettuce, followed by slices of tomatoes and pickles. If desired, sprinkle with fresh parsley for a burst of color and added freshness.
