Crepes

  • Author: Lana
  • Total Time: 30 minutes

Ingredients

Scale
  • 1 cup all-purpose flour

  • 2 large eggs

  • 1 ½ cups milk (whole or any non-dairy milk like almond or oat milk)

  • 2 tablespoons melted unsalted butter (or any halal butter substitute)

  • 1 tablespoon sugar (optional, for sweet crepes)

  • ½ teaspoon salt

  • 1 teaspoon vanilla extract (optional, for sweetness)

  • A pinch of ground cinnamon (optional, for flavor)

Ingredient Highlights

  • Flour: The foundation for crepes, providing the necessary structure for the batter to hold together. You can also use gluten-free flour if needed.

  • Eggs: Eggs help bind the ingredients together and add to the rich, tender texture of the crepes.

  • Milk: Creates a smooth batter and gives the crepes a soft, light consistency. You can use dairy-free milk to make them vegan or allergy-friendly.

  • Butter: Adds flavor and tenderness to the crepes. Halal-certified butter or vegan alternatives work just as well.

  • Vanilla Extract: A little vanilla can elevate the flavor of sweet crepes, enhancing the richness of the batter.

  • Salt and Sugar: These add balance, with salt helping to accentuate the flavors, and sugar providing sweetness for dessert-style crepes.

Instructions

Prepare the Crepe Batter:

  1. Mix Wet Ingredients: In a large bowl, whisk the eggs and milk together until well combined. Add in the melted butter, vanilla extract (if using), and sugar (if using). Stir until everything is well incorporated.

  2. Combine Dry Ingredients: In a separate bowl, sift together the flour and salt. This helps to ensure the crepes come out smooth and without any lumps.

  3. Add Dry Ingredients to Wet Ingredients: Gradually add the dry mixture to the wet mixture, stirring continuously to avoid any lumps. The batter should be thin, similar to heavy cream. If it’s too thick, add a bit more milk to achieve the right consistency.

  4. Let the Batter Rest: Allow the batter to rest for about 10 minutes. This step is optional but helps to improve the texture of the crepes and makes them even more tender.

Cook the Crepes:

  1. Heat the Pan: Preheat a non-stick skillet or crepe pan over medium heat. Once the pan is hot, lightly grease it with a bit of melted butter or oil.

  2. Pour the Batter: Pour about ¼ cup of batter into the center of the pan. Immediately tilt and swirl the pan to spread the batter thinly and evenly across the surface.

  3. Cook Until Golden: Cook the crepe for about 1-2 minutes, or until the edges begin to lift and the bottom is golden brown.

  4. Flip the Crepe: Gently slide a spatula under the crepe and flip it over. Cook for another 30 seconds to 1 minute, until the other side is also golden brown.

  5. Repeat the Process: Continue cooking the remaining crepes, adding more butter or oil to the pan as needed. Stack the cooked crepes on a plate and cover them with a clean kitchen towel to keep them warm.

Fill and Serve:

  1. Fill and Fold: Once all the crepes are cooked, it’s time to fill them with your favorite ingredients. For sweet crepes, consider filling them with Nutella, whipped cream, fresh berries, or a sprinkle of powdered sugar. For savory options, try cheese, sautéed vegetables, or chicken.

  2. Serve: Fold the crepes into quarters or roll them up. Serve immediately with your chosen toppings.
