Instructions

Assemble the Phyllo Bites:
- Prepare the Phyllo Dough: Unroll the phyllo dough carefully on a clean, flat surface. Phyllo dough is delicate, so handle it gently to avoid tearing. Brush a sheet of phyllo dough with olive oil, then layer another sheet on top and brush that with oil as well. Repeat this process for 3-4 sheets of phyllo dough to make a sturdy base for your bites.
- Cut the Dough: Using a sharp knife or kitchen scissors, cut the stacked phyllo sheets into squares, about 3-4 inches in size.
- Add the Filling: Place about 1-2 teaspoons of the feta mixture in the center of each square of dough. Be sure not to overfill, as the dough needs to fold easily around the filling.
- Fold the Phyllo: Fold the corners of the phyllo square up toward the center, creating a little packet. Gently press the edges together to seal the filling inside. If needed, you can lightly press the dough to make sure it stays closed.
Bake the Bites:
- Egg Wash: In a small bowl, whisk the egg and brush it over the tops of the phyllo packets. This will help them turn golden brown and crispy as they bake.
