  • Fresh parsley, chopped (for garnish)

  • 1 tablespoon olive oil or butter for sautéing

  3. Make the Alfredo Sauce: Slowly pour in the heavy cream, stirring constantly to combine the pumpkin with the cream. Bring the mixture to a gentle simmer, stirring occasionally, until the sauce is thickened and creamy, about 5 minutes.

  4. Season the Sauce: Add the Parmesan cheese, nutmeg, cinnamon (if using), salt, and black pepper. Stir until the cheese is melted and the sauce is smooth and well-combined. Taste and adjust seasoning as needed.

Combine the Pasta and Sauce:

  1. Toss the Pasta in the Sauce: Add the cooked pasta to the skillet with the pumpkin Alfredo sauce, tossing to coat the pasta evenly. If the sauce is too thick, add a little reserved pasta water to thin it out to your desired consistency.
