California Roll Recipe

  • Author: Lana
  • Total Time: 1hour

Ingredients

Scale

For the Sushi Rice:

  • 2 cups sushi rice: Sushi rice is short-grain rice, which becomes sticky when cooked, perfect for sushi rolls.
  • 2 ½ cups water: To cook the sushi rice.
  • ¼ cup rice vinegar: Adds a tangy flavor to the rice and helps it stick together.
  • 2 tablespoons sugar: Sweetens the rice slightly.
  • 1 teaspoon salt: Balances the flavors of the rice vinegar and sugar.

For the California Roll Filling:

  • 1 pack imitation crab sticks: These are typically made of fish (usually pollock) and are the traditional filling for California Rolls. You can substitute with cooked shrimp or tuna if desired.
  • 1 ripe avocado: Provides creaminess and richness to the roll.
  • 1 cucumber: Julienne the cucumber for a refreshing crunch.
  • 1 tablespoon mayonnaise: Optional, adds creaminess to the crab filling.
  • 1 teaspoon lemon juice: Helps prevent the avocado from browning and adds freshness.

For Rolling the Sushi:

  • 4–6 sheets of nori (seaweed): These sheets are used to wrap the rice and fillings.
  • 1 tablespoon sesame seeds (optional): To sprinkle on the outside of the roll for added texture and flavor.
  • Soy sauce: For dipping, adds a savory flavor to the sushi.
  • Pickled ginger: Serves as a palate cleanser between bites.
  • Wasabi: A spicy condiment that complements the sushi and adds a kick.

Instructions

FIRST STEP: PREPARE THE SUSHI RICE

  1. Rinse the Rice: Start by rinsing the sushi rice in cold water until the water runs clear. This step removes excess starch and prevents the rice from becoming too sticky during cooking.
  2. Cook the Rice: Add the rinsed rice and water to a rice cooker or a pot. If using a rice cooker, simply follow the manufacturer’s instructions. For stovetop cooking, bring the water to a boil, then reduce the heat to low, cover, and let the rice cook for about 18-20 minutes. Once the rice is cooked, remove from heat and let it sit, covered, for 10 minutes to steam.
  3. Season the Rice: While the rice is cooling, mix the rice vinegar, sugar, and salt in a small bowl. Microwave it for about 10-15 seconds to dissolve the sugar. Once the rice has cooled slightly (but is still warm), gently fold the vinegar mixture into the rice using a wooden spoon or spatula. Be careful not to mash the rice. Spread the rice out on a flat surface to cool completely, covering it with a damp towel to prevent it from drying out.

SECOND STEP: PREPARE THE FILLINGS

  1. Prepare the Imitation Crab: Remove the imitation crab sticks from their packaging and shred them into small pieces using your hands or a knife. If desired, mix the crab with a tablespoon of mayonnaise for added creaminess. You can also substitute imitation crab with cooked shrimp, cooked fish, or even a vegetable filling.
  2. Prepare the Avocado: Slice the avocado in half, remove the pit, and scoop the flesh out with a spoon. Cut it into thin slices and drizzle a little lemon juice over it to keep it from browning.
  3. Prepare the Cucumber: Peel the cucumber and cut it into thin, julienne strips. Remove the seeds if desired for a smoother texture.

THIRD STEP: ASSEMBLE THE CALIFORNIA ROLL

  1. Prepare the Rolling Mat: Lay a bamboo sushi rolling mat on a clean surface. Place a sheet of nori on the mat, shiny side down, with the longer edge facing you.
  2. Spread the Rice: Wet your fingers with a bit of water to prevent the rice from sticking. Take about ¾ cup of sushi rice and spread it evenly over the nori, leaving a small border at the top edge (about 1 inch). Press the rice down gently to ensure it sticks to the nori.
  3. Add the Fillings: Lay the shredded imitation crab, avocado slices, and cucumber strips horizontally in the center of the rice.
  4. Roll the Sushi: Lift the edge of the bamboo mat closest to you and carefully begin rolling the sushi away from you, pressing it firmly as you roll. Use the mat to help shape the roll, ensuring it’s tight but not too tight. Once you reach the end of the nori, wet the top edge with a bit of water to seal the roll.
  5. Slice the Roll: Use a sharp knife to slice the roll into 6-8 pieces. Clean the knife with a damp towel between each cut to keep the slices neat.

FOURTH STEP: FINISH AND SERVE

  1. Garnish: If desired, sprinkle sesame seeds on the outside of the roll for added flavor and texture.
  2. Serve: Arrange the California Rolls on a serving platter and serve with soy sauce, pickled ginger, and wasabi. Enjoy immediately!
