  • 2 tablespoons chopped green onions: Adds freshness and a hint of onion flavor.
  • 1 tablespoon toasted sesame seeds: For texture and a nutty finish.

For the Mazesoba:

  • 2 servings of fresh or dried ramen noodles: These noodles will provide the chewy base of the dish. You can also use other types of Japanese noodles, such as udon or soba, if preferred.
  • 1 tablespoon sesame oil: To coat the noodles and prevent them from sticking.
  • 1 boiled egg, halved: Adds richness and creaminess to the dish.
  • ½ cup cooked chicken or tofu (halal-friendly): For protein. You can substitute with ground beef or chicken if preferred.
  • 1 tablespoon chopped cilantro: For garnish and freshness.
  • 1 tablespoon pickled ginger (optional): Adds a tangy, slightly sweet contrast to the dish.
  • Chili crisp sauce (from the recipe above): To toss with the noodles and create the flavorful base of the dish.

Instructions

First Step: Prepare the Chili Crisp Sauce

  1. Heat the Oil: In a small saucepan, heat the vegetable oil over medium heat. Once it’s hot, add the minced garlic and ginger. Sauté for 1-2 minutes, or until fragrant, being careful not to burn them.
  2. Add the Chili Flakes: Stir in the chili flakes and continue sautéing for another 1 minute. The oil will begin to take on a deep red color, signaling that the chili flakes have infused their flavor into the oil.
  3. Add the Remaining Ingredients: Stir in the soy sauce, rice vinegar, sugar, and sesame oil. If you’re using Sichuan peppercorns, add them now. Continue to cook the mixture over low heat for 3-4 minutes, allowing the flavors to meld together.
  4. Finish the Sauce: Remove from heat and let the sauce cool slightly. Stir in the chopped green onions and sesame seeds. Your chili crisp sauce is now ready to use!

Second Step: Prepare the Noodles

  1. Boil the Noodles: Cook the ramen noodles according to the package instructions, usually in a large pot of boiling water for about 3-4 minutes for fresh noodles, or 6-8 minutes for dried noodles. Once cooked, drain the noodles well and rinse them under cold water to stop the cooking process.
  2. Toss with Sesame Oil: Drizzle 1 tablespoon of sesame oil over the cooked noodles and toss to coat. This prevents them from sticking together and adds a rich, nutty flavor to the noodles.

Third Step: Prepare the Toppings

  1. Cook the Protein: If you’re using cooked chicken or tofu, heat it in a small pan with a little oil. Stir-fry until heated through and lightly golden. This step is optional, as you can also serve the dish without cooked protein for a vegetarian version.
  2. Prepare the Garnishes: Slice the boiled egg in half. Chop the cilantro and pickled ginger, if using.

Fourth Step: Assemble the Mazesoba

  1. Toss the Noodles with Sauce: In a large mixing bowl, combine the prepared noodles with the chili crisp sauce. Toss everything together until the noodles are well-coated with the sauce.
  2. Top with Protein and Egg: Add your protein of choice to the noodles and place the boiled egg halves on top.
