  • 1 can (10.5 oz) diced tomatoes with green chilies (or regular diced tomatoes if you prefer)
  • 1 can (15 oz) black beans, drained and rinsed (optional for added texture)
  • 1 ½ cups shredded cheddar cheese (or a blend of your favorite cheeses)
  • 3 cups Dorito chips, crushed
  • 1 cup sour cream (or Greek yogurt for a lighter version)
  • 1 cup salsa (optional, depending on your spice preference)
  • Fresh cilantro, chopped (optional for garnish)
  • 1 tablespoon olive oil (for cooking)
  • Salt and pepper to taste

  3. Season the Meat: Once the meat is cooked through, drain any excess fat if needed. If you’re using black beans, add them now and stir to combine.

Assemble the Casserole:

  1. Layer the Doritos: Spread a layer of crushed Doritos chips at the bottom of the prepared baking dish, ensuring the bottom is fully covered.

  2. Add the Meat Mixture: Spoon the seasoned meat mixture over the layer of Doritos, spreading it evenly across the dish.

  3. Add the Sour Cream: Drop spoonfuls of sour cream (or Greek yogurt) over the meat mixture, then gently spread it out with the back of a spoon.

  4. Top with Cheese: Sprinkle a generous amount of shredded cheddar cheese (or a blend of your favorite cheeses) over the sour cream layer.
