Egglets

  • Author: Lana
  • Total Time: 45minutes

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup whole milk (or dairy-free milk for a dairy-free version)
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional for flavor)
  • A pinch of sea salt (optional for a sweet and salty twist)
  • Oil spray for greasing the pan

Ingredient Highlights

  • Flour: All-purpose flour gives the Egglets their structure and texture. You can use gluten-free flour as a substitute if necessary.
  • Sugar: White granulated sugar adds sweetness to the Egglets, which balances out the savory elements.
  • Eggs: Eggs help provide the light, fluffy texture inside the Egglets and contribute to the golden color.
  • Milk: Whole milk makes the Egglets tender, but you can use any plant-based milk to make this recipe dairy-free.
  • Butter: Melted butter adds richness and flavor to the Egglets, enhancing their overall taste and crispiness.
  • Vanilla Extract: Vanilla provides a warm, sweet undertone that complements the flavor of the Egglets perfectly.

Instructions

Prepare the Egglet Batter:

  1. Preheat the Egglet Pan: Preheat an egglet pan or a mini waffle pan on medium heat. If you don’t have an egglet pan, you can use a mini waffle maker, but the shape may vary slightly.
  2. Mix the Dry Ingredients: In a medium-sized mixing bowl, sift together the flour, sugar, baking powder, salt, and optional cinnamon. Sifting helps to eliminate lumps and ensures even distribution of the ingredients.
  3. Mix the Wet Ingredients: In a separate bowl, whisk the eggs, milk, melted butter, and vanilla extract until the mixture is smooth and well combined.
  4. Combine the Wet and Dry Ingredients: Gradually add the dry ingredients into the wet mixture, stirring gently with a spatula or wooden spoon until fully incorporated. The batter should be smooth but thick, similar to pancake batter.

Cook the Egglets:

  1. Grease the Pan: Lightly grease the egglet pan with oil spray to prevent sticking. Make sure to cover all the molds evenly.
  2. Fill the Pan: Pour the batter into the egglet molds, filling them about 2/3 of the way. Be careful not to overfill, as the batter will expand as it cooks.
  3. Cook the Egglets: Close the egglet pan and cook for 3-4 minutes on one side. Flip the pan carefully and cook for another 2-3 minutes, or until the Egglets are golden brown and crispy on the outside.
  4. Cool and Serve: Once done, remove the egglets from the pan and let them cool for a few minutes on a wire rack before serving.

Cut and Serve:

  1. Serve: Once your Egglets have cooled slightly, you can serve them right away. For added flavor, dust with powdered sugar, drizzle with chocolate sauce, or top with fresh fruit, whipped cream, or ice cream.
