Instructions
FIRST STEP: PREPARE THE LAMB CHOPS
- Trim the Lamb: If the lamb chops are not already French-trimmed (the bone exposed), carefully trim away any excess fat and sinew from the base of the bone to create a clean presentation.
- Season the Lamb: In a small bowl, combine the olive oil, minced garlic, rosemary, thyme, lemon zest, salt, and pepper. Rub this mixture evenly over the lamb chops, making sure each piece is well-coated.

SECOND STEP: PREPARE THE MINT PESTO

THIRD STEP: COOK THE LAMB LOLLIPOPS
- Preheat the Oven: Preheat your oven to 400°F (200°C). If you’re using a stovetop skillet, heat it over medium-high heat.
- Sear the Lamb (Optional): For a caramelized crust, heat a skillet over medium-high heat. Sear the lamb chops for 2-3 minutes per side, until they are browned. This step is optional but adds flavor.
- Roast the Lamb: Transfer the lamb chops to a baking sheet lined with parchment paper or foil. Roast in the preheated oven for 12-15 minutes, depending on your desired level of doneness. For medium-rare lamb, aim for an internal temperature of 135°F (57°C). Adjust cooking time if you prefer it more or less done.
- Rest the Lamb: Once the lamb is cooked, remove it from the oven and let it rest for 5-10 minutes. This helps the juices redistribute and ensures the lamb remains tender and juicy.
FOURTH STEP: ASSEMBLE THE DISH
- Plate the Lamb Lollipops: Arrange the cooked lamb chops on a serving platter or individual plates. You can place them upright, resembling “lollipops,” or lay them down for a more elegant presentation.
- Drizzle with Mint Pesto: Generously drizzle the mint pesto over the lamb chops. You can also serve the pesto on the side for guests to add themselves.
