Instructions
FIRST STEP: SEAR AND PREPARE THE BEEF
- Sear the Beef: Begin by heating 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat. Once the oil is hot, add the beef chuck roast and sear each side for 4-5 minutes until browned. This step locks in flavor and enhances the overall taste of the beef.
- Sauté the Onion and Garlic: After searing the beef, remove it from the pot and set it aside. Add the chopped onion to the pot and sauté for 2-3 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- Add the Seasonings: Sprinkle the brown sugar, ground cumin, paprika, black pepper, and salt over the onions and garlic. Stir well to combine the spices and toast them for about 1 minute to bring out their flavor.
- Deglaze the Pot: Pour in the beef broth, scraping up any browned bits from the bottom of the pot. Stir in the tomato paste, apple cider vinegar, and soy sauce. This creates a flavorful base for the beef to cook in.
SECOND STEP: COOK THE BEEF LOW AND SLOW
- Add the Beef Back to the Pot: Return the seared beef chuck roast to the pot, ensuring it’s submerged in the liquid. Cover the pot with a lid.
- Slow Cook the Beef: Reduce the heat to low and let the beef simmer for 4-5 hours, or until the meat is incredibly tender and easily shreds with a fork. If using a slow cooker, set it on low for 6-8 hours.
- Shred the Beef: Once the beef is cooked through and fork-tender, remove it from the pot and shred it using two forks. Discard any fat or tough pieces. Return the shredded beef to the pot and stir it into the cooking liquid to soak up all the delicious flavors.
THIRD STEP: ASSEMBLE THE SLIDERS
- Prepare the Rolls: Preheat your oven to 350°F (175°C). Slice the King’s Hawaiian rolls in half horizontally, keeping the rolls connected. Place the bottom halves of the rolls in a baking dish.
- Fill the Rolls: Spoon a generous amount of the pulled beef mixture onto the bottom halves of the rolls. You can pile it up, depending on how meaty you want your sliders.
- Top with Cheese (Optional): If using cheese, place a slice of cheddar cheese on top of the pulled beef for a melty finish.
- Brush with Butter: Brush the top halves of the rolls with melted butter, then place them on top of the beef, creating the sandwich.
- Bake the Sliders: Cover the baking dish with foil and bake for 10-12 minutes, or until the sliders are heated through and the cheese is melted. Remove the foil during the last 3-4 minutes to allow the tops to become golden and slightly crispy.
